Sponge Cake Layer Recipe
This recipe will make two 9 inch sponge cake layers. You can use the results to make a sponge cake or use them to make a wonderful triffle.
First here is the recipe for the sponge layers.
Beat until light and fluffy one cup of sifted sugar and 3 to 6 egg yolks. (It depends on how economical you want to be.)
Add 1/4 cup of boiling water, mix until blended and let cool.
Sift together 1/4 teaspoon salt, 1 1/2 teaspoons baking powder and 1 cup flour.
Stir the flour mix into the egg batter until it is blended.
Add some vanilla and orange rind or flavor.
Beat 3 to 6 egg whites until they are stiff.
Fold in the egg whites
Divide the mix between 2 9 inch pans.
Bake at 350 degree Fahrenheit for about 45 minutes. You can bake at a lower temperature and in a shorter time if you use convection heat.
