Russian Pierogi
How to make Russian Pierogi and the pierogi filling.
Russian pieogi are pierogi that are filled with potatoes and cheese.
The filling is made of:
4 cups mashed potatoes
4 to 5 cups of farmers cheese
3 tablespoons of butter
2 medium onions
Salt and pepper to taste
Making the Russian pierogi filling is straight forward.
Saute the finely chopped onions in butter until soft and transparent.
Combine the sauted onions with the farmers cheese and warm mashed potatoes.
Add salt and pepper to taste.
Place about 1 tablespoon of the filling in the center of a four inch circle of pierogi dough. Fold, press and seal.
In a large pot of boiling, salted water, cook the pierogi for about 5 to 6 minutes, or until they float. Remove from the water and drain.
Serve Russian pierogi with melted butter and a garnish of bacon crumbs, and optional sour cream.
