Herring With Spicy Red Sauce

This is a recipe for Polish herring that is topped with a spicy red sauce.

This recipe uses salted herring fillets.

Soak the herring in water a few hours to take out the salt. Change the water a couple times. It is best if you soak it over night.

Saute a finely chopped onion. Add to the sauteed onion some tomato paste and a little bit of water. Saute the two together. And water as necessary to make a paste that is the consistency of ketchup.

At this point you may spice it as you wish. You might add some hot ketchup, some garlic, and red pepper, or whatever spice you wish.

Cover the herring with the sauce and chill.

Serve when you are ready.
