In modern Poland, traditional Polish cooking seems to mean using recipes that are popular. And the inventory of recipes that are considered traditional keeps growing.
For example, it is now considered traditional to serve turkey on Easter. The markets in Poland make special effort to have fresh whole turkey available to satisfy the growing demand for this recently adopted tradition. During the rest of the year, the markets carry fresh turkey breasts and legs. The rest of the turkey is offered as fresh ground.
Corn is an interesting addition to the Polish menu. Using corn in salads is considered traditional. It can even be found on Pizza. And while talking about Pizza, pinapple and tuna fish are tradtional offerings.
There are some cookbooks that cover Polish cooking as it was in the past. You can see them here. Polish Cookbooks
The modern traditional recipes are, however, generally available only in the Polish language. And it is these new cookbooks that fix what is tradional simply by calling them that.
It is interesting to note that many of the ingredients used are from the Americas. For example now traditional Polish food items from the Americas include potatos, corn, turkey, and tomatoes.
And then much of the seafood now consumed is something new to most of the people only in the past few years. Salmon and trout have not yet replaced carp on the table for the holidays, but they have for the remainder of the year.
And as Poland moves forward, its traditions in food are changing as the country changes.
