This is recipe for Szarlotka which is Polish apple cake. It is a year round Polish favorite and is sure to be on all holiday tables.
Mix 3 cups of flour, 1 egg yolk, 1 cup butter and 1 cup of sugar as you would a pie dough. Just mix enough until it holds together. Put it in a container in the refrigerator for an hour or more to rest and develop.
Peel and chop into bite sized pieces one kilogram of apples.
Put 400 grams of the apples in a pot with 1/2 cup sugar/ 1/4 cup water and 1/4 cup raisins. Add 1/2 tsp cinnamon. You may also add 1/8 tsp or nutmeg and/or cloves. Simmer the mass until the apples are tender.
Let it cool. When cool, add the uncooked apples.
Divide the dough in two.
Roll out half and place it in a baking pan. Fill with the apple mixture.
Roll out the second half and use it as a top.
You will also find some szarlotka that have only a crumb topping.
Bake at about 350 degrees F for about 45 minutes.
