Polish Recipe For Klops ( Meatloaf ) With Egg
Klops is meatloaf. Klopski are meatballs. This is a Polish recipe for meatloaf or Klops. This is a Holiday and special occasion dish.
When Polish people make meatloaf, they fill the center with hard boiled eggs. It adds a rather nice touch to what might be considered as a very basic meal.
Sometimes people add prunes instead of the eggs.
At holiday gatherings you will often see plates of sliced ham, kielbasa, various pates and meatloaf on the table. This is typical of the meatloaf that you will find included on the plate.
Surprise your family by adding eggs, prunes or dried apricots to your own favorite meatloaf recipe.
Ingredients:
About 1 pound of ground pork.
1 stale roll or bread crumbs
4 eggs
1 medium onion
fat for frying the onion
salt, pepper
Preparation:
If you have a stale roll or stale bread, grind or process it into bread crumbs. If you have neither, used some store bought bread crumbs.
Sometimes we use prepared stuffing mix. It gives the meat loaf a little extra kick. But such stuffing mix does not exist in Poland so you would be doing something a little out of the ordinary.
Regardless of what you use, mix it with the ground pork. Spice it with a little salt and pepper.
Boil and peel 3 of the eggs. Boil them just hard enough so that you can handle them and put them into the center of a meat roll.
Then fry the onion with the remaining egg. Add that to the bread and ground pork mixture. ( Note that you can avoid the frying and make the egg and onion up in your microwave.)
Put a layer of the meat mixture in your baking pan.
Then lay the eggs on top of the meat and cover them with the remainder of the meat.
Bake in a hot oven for an hour or so.
