The Polish people are fascinated with their mushrooms . They pick mushrooms whenever they can and you see people alongside the roads selling mushrooms to those who do not have the opportunity to go into the forests of Poland. the button mushroom that one typically sees in the markets in the United States is widely available in Poland but the Polish people definitely prefer the hand-picked variety that comes from the many forests.

This recipe uses the common button mushroom. But in Poland this recipe would be used for many other types of mushrooms.

How to Prepare The Mushrooms

This is a very easy recipe to prepare. It will make 2 pints of pickled mushrooms. In Poland these mushrooms find their way to the table most assuredly during the holidays but also you will find them at the table for everyday meals.

You can adjust the taste of these mushrooms by using wine vinegar instead of the white vinegar . To some people the white vinegar is a bit too sharp. So if you have someone who likes a little less sharpness in the marinade, use the wine vinegar. Some people also add a touch of sugar.

In a large saucepan, combine the water and salt and bring the combination to a boil.

Add the mushrooms.

Cover the pot tightly and simmer over low heat 10 minutes.

Strain the mushrooms and discard the cooking liquid.

Let the mushrooms cool. Arrange equal amounts of mushrooms in each of the 2 pint canning jars.

Prepare the marinade by simmering the vinegar, peppercorns and bay leaves in a small covered saucepan 10 minutes over medium-low heat.

Pour the boiling marinade over mushrooms. The marinade should cover the mushrooms.

Place lids on jars and seal tightly. Let cool to room temperature and then put them in the refrigerator. Serve chilled.

Ingredients

Mushroom Preparation: 2 1 pint canning jars
3 cups water
2 tablespoons salt
2 pounds small button mushrooms

Marinade: 1 1/4 cups white vinegar
10 each peppercorns
2 each bay leaves
