Recipe For Festival Cheesecake
Every Polish holiday is sure to be celebrated with a family gathering at a large meal at which you will find one or more cheesecakes. The cheesecake that is presented here is one that is very popular at family gatherings. It is made for the holidays and it is also made at the time of the many festivals that occur in Poland. It is a very easy cake to make and the results are simply delicious.
Preheat the oven to 400°F. Grease a 9 inch springform pan. Line the pan with a 1/8" thickness of short crust pastry.
Prepare the filling by beating the ricotta cheese, whipping cream, sugar, flour and eggs in a large bowl until smooth. Then stir in the raisins and grated orange peel.
Pour the filling into the pastry lined springform pan.
Roll short crust pastry to a thickness again of about 1/8" and cut it into strips that you lay over the top of the cheese mixture. Arrange them in a crisscross pattern.
Start baking at 400° for 20 minutes and then reduce the oven temperature to 350°F and bake for another 45 minutes or so until set cool it before removing it from the pan.
Ingredients
1 1/2 pound ricotta cheese
two thirds cup whipping cream
one half cup sugar
one tablespoon all-purpose flour
three eggs
two tablespoons raisins
one tablespoon grated orange peel
