Traditional Polish Dinners for Christmas Eve
Christmas Eve in Poland is all about family gatherings and huge meals. The Christmas Eve family gathering is the event of the year and each family's kitchen contributes to the great Polish traditional celebration of Christmas every year.

To help you get a feel for some of what a meal on Christmas Eve might include, here is a summary of five proposals for Christmas meal offerings.
People sit down to the dinner at about 1600 at which time it is dark enough for the first stars of Christmas to be seen. When they sit down they begin a marathon of eating, talking, laughing, and enjoying life in general.
Christmas evening meal will generally start with an offering of soup. The three most popular soups offered are red borsch, mushroom soup and fish soup. See Recipe For Polish Fish Soup. Uzchi (ears) are served with the borsch.
The soups are followed by various offerings of herring. One finds such things as creamed herring, herring in spicy honey, sweet and sour herring, herring in garlic plum sauce and herbed herring.
After the herring comes another offering a fish. It will often include jellied pike with horseradish sauce, pike Jewish style, jellied carp or unique dishes like cat fish and red cabbage.
Then a special holiday cabbage dish follows. Most often it is cabbage with beans or cabbage with mushrooms. Some people modify the cabbage dish by baking cabbage with beans and mushrooms These cabbage dishes take days to prepare and are generally seen only on Christmas Eve. .
Carp finally finds its way to the table in one form or another. Carp Jewish style is a favorite of many people. But then there is carp Polish style, baked carp, jellied carp, fried carp and carp made in many combinations and permutations.
An offering of pierogi is fit in somewhere.
Homemade plum or fresh fruit compotes occupy special places on the table.
Prior to the desert Mikolaj somehow finds his way to deposit presents under the Christmas tree. There follows a great gift giving as they are distributed to everyone in the room.
After the presents are opened, desert is served.
Special Christmas cakes made by the many women in the room are deposited on the table and the remainder of the evening is spent in enjoying the Christmas Holiday cheer.
