This is a fast and easy recipe for poached Karp.
Saute a large, chopped onion. Place either the whole Karp or slices in the pan and cover with fish stock or water.
Add a crushed clove of garlic, 1/2 cup white wine, 1 stalk of chopped celery, 1 sliced carrot, salt and pepper.
Simmer until tender.
Serve on a plate garnished with lemon wedges, lettuce and carrot slices. Serve with horseraddish sauce.
