Polish Plum Cake Recipe
Poland is a country of plums. In the fall you see plums everywhere. The markets, fruit and vegetable stands and roadside stands are just loaded with plums.
Plum cake is one of those simple cakes that follows the harvest. Here is the recipe for the simple and delicious cake.
The cake is a cookie type base with whole split plums or plum halves pushed into the base. Once baked it is sprinkled with powdered sugar.
Some cooks use the extra egg whites by beating them and baking them atop the plums.
To make the dough, cream 1/2 cup sugar and one cup margarine or butter.
Blend in 5 egg yolks.
Add 3 cups flour, 2 teaspoons of baking powder and vanilla sugar.
Mix it just enough until it binds and is smooth.
Spread on a cookie sheet.
Stick into the dough split plums. Lay them flat with the skin side down, or stick them in on an angle.
Bake at 200 C until the dough is done. That should be 25 to 30 minutes.
Let it cool and add powdered sugar.
If you wish, before you bake it, whip the extra egg whites to a stiff peak and put them over the plums. Bake as above.
