One Bowl Yellow Cake

This recipe comes off an old can of baking powder. Because the cake is so good, I still keep the can.

Dry Ingredients - 2 cups sifted cake flour (reduce by 2 tablespoons when using all purpose flour), 1 1/2 cups sugar, 2 1/2 teaspoons baking powder, 1 teaspoon salt, 1/2 cup shortening.

Liquid Ingredients - 1 cup less 2 tablespoons milk, 1 1/2 teaspoons vanilla, 2 eggs.

Sift the flour, sugar and salt into a mixing bowl. Drop in shortening, add 1/3 of the milk and vanilla; beat for two minutes by clock (about 150 strokes per minute) or mix with electric mixer on slow to medium speed for two minutes.

Scrape the the bowl often during the entire mixing.

Add eggs and remaining milk, beating two minutes longer.

Pour batter into two greased and paper lined pans.

Bake at 375 F for 20 to 25 minutes.

Cool before frosting.
